I installed JDK 1.5.0 with the symlink (1.5 -> 1.5.0) using Pacifist from JavaForMacOSX10.5Update5.
I guess it can be done by using the ln command (sudo ln -fhsv 1.5 1.5.0?, well, I am novice to Unix.....).
I think the default symlink in Snow Leopard is 1.5 -> CurrentJDK (haven't confirmed it).
